Peal and chop the onion and the potatoes. Wash the wild garlic and cut it into stripes. Put two tablespoons aside. Heat some olive oil in a pan and steam the onions until they are glassy. Put the potatoes in the pan and roast them shortly. Afterwards infuse it with the vegetable broth. Add the wild garlic and cook everything for 15 minutes on medium heat. While the soup is cooking, heat some butter in a pan and roast the croutons until they are crispy. Then puree the soup, season it with salt and pepper and puree it for another time.
Put the soup into bowls and serve it garnished with the roasted croutons and some fresh wild garlic.
Roast the croutons before serving.
