Ingredients (for 1 strudel at 8 – 10 servings)

1 pkg. strudel dough

135 g risotto rice

500 ml milk

1/2 tsp cinnamon

3 apples

1 pinch of salt

60 g sugar (or 1/2 tsp stevia)

juice of lemon

100 g mascarpone (light)


Cook the rice with the salt in the milk on low heat, add the sugar or the stevia powder. Let the milk rice cool down. Add the lemon juice, the mascarpone and the cinnamon to the rice. Wash and rub the apples and add it to the milkrice mix. Roll out the dough and put the filling on the dough, roll it to a strudel. Spread it with an egg. Bake the strudel for 45  – 50 minutes at 175° degrees.

Garnish it with powdered sugar.
