Ingredients (for 6 – 8 servings):

300 g couscous

400 ml vegetable brooth

1 small onion

250 feta cheese

1 cucumber

2 lemons

1/2 hand of mint loaves

6 tbs olive oil

5 tbs balsamic vinegar

salt & pepper

Preparation:

Heat the vegetable broth. Add the couscous in the hot vegetable broth and soak the couscous for 5 – 7 minutes. Peel the onion and the garlic, cut them in small pieces and roast it in some olive oil. Mix the onions with the couscous. Wash the cucumber and cut it in pieces. Dice the lemons in slices, and after that in small pieces, extract the lemon seeds.

Pour the couscous in some jam jars. Add the lemons, the cucumber and the feta in layers, salt and pepper it. Add the mint, vinegar, olive oil and salt and pepper. Close the jars.

Tip: if you want you can mix all ingredients in one big bowl and put it in glasses. You can add a wooden fork on the jar with twine.
