Easy recipe for veggie potatoe soup.


500 g potatoes

1000 ml vegetable broth

200 g sour cream

1 onion or scallions

extra virgin olive oil

salt and pepper

grated majoram


Peel the onion and the potatoes and cut it in small pieces. Heat olive oil in a pot and roast the vegetables in the oil. Pour it with vegetable broth. Cook it for about 15 – 20 minutes. Stir the sour cream in and puree it with a blender. Flavor it with salt and pepper and majoram.

Roast bread pieces and serve the potatoe soup with the black bread croutons.
