Ingredients (for a form: 40 x 20 cm)

For the short pastry:

250 g flour

120 g butter

1,5 tsp salt

2 eggs

For the filling:

2 (big) bunches of (mixed) herbs

2 tbs Demmer herbal tee (Fresh Green)

3 spring onions

2 tbs olive oil for roasting

2 garlic cloves

3 eggs (Size L)

350 g sour cream

100 g spicy cheese (rubbed)

salt & pepper


For the short pastry dice the cold butter and knead flour, salt and 2 eggs to a smooth dough. Roll out the dough on a floured surface, put it into a square or round form and press the dough slightly on the form’s edge. With a fork prick a few wholes in the dough.

For the filling: Wash and chop the herbs finely. Roast chopped spring onions and garlic cloves in oil briefly. Put the cubes together with the chopped herbs and the tee into the dough. Whip the sour cream together with the eggs and season it with salt and pepper. Pour it over the mixture. Finally sprinkle the quiche with spicy, rubbed cheese.

Bake the quiche in the preheated oven at 175° C for 45 minutes.
