Rice Hawaiian Style with Chicken, Pineapple & Coriander
Prepare the rice and put it aside.
Peel and finely chop the parsley. Clean the paprika and cut into mouth sized pieces. Peel the pineapple and cut into small pieces. Heat a bit of olive oil in a big, deep pan. Sauté the onion dices in it. Add the paprika dices and roast them while stiring. Add the pineapple pieces and roast shortly. Fold in the rice and season the mixture with salt, pepper, chili and the dried coriander. Season the chicken filets with salt & pepper. Heat olive oil in a pan and rost them on both sides. Wash and chop the parsley and fold into the rice. Serve the rice with the chicken filets.
