Ingredients (for 4 servings):

200 g quinoa

200 g feta cheese

150 g blackberries

100 g rasperries

2 avocados

1/2 cucumber

1/2 bunch mint

salt & pepper

juice of one lemon

8 tbs white balsamico

4 tbs honey

8 tbs olive oil

4 tbs almond

Preparation:

Cook the quinoa according to package instructons and let it cool down. Halve the cucumber and peel it. Wash the berries and the mint leaves. Chop the mint leaves. Peel the avocado and dice it in small pieces. Crumble the feta cheese. Mix the cucumber, avocado and the feta cheese with the quinoa. Season it with salt and pepper. Mix the honey with the lemon juice, balsamic and the olive oil until its a creamy dressing. Marinade the salad, serve it in small bowls and garnish it with the berries and the almonds.

If you want put the quinoa salad with the berries in the fridge for some time – it will taste more intense.
