Fine recipe for oven baked asparagus with bacon & beetroot. Ingredients (for 2 servings):

1 bunch asparagus

50 ml vegetable broth

2 tbs white balsamico

4 tbs olive oil

2 tbs pine nuts

salt & pepper

1/2 tuber beetroot

5 – 6 slices bacon


Wash and peel the asparagus, and put it in a baking dish. Add the vegetable broth, the balsamico and the olive oil. Salt and pepper the asparagus. Add the bacon and bake it in the preheated oven for 20 – 25 minutes at 175 degrees.

Roast the pine nuts in a pan. Peel the reed beet and cook it in salted water. Dice it in small pieces and garnish the baked asparagus with the beetroot and the pine nuts.

Tip: serve it with green salad and some cream cheese.
