Easy recipe for mediterranean rice salad – quick and healthy dish or party recipe veggie style. By adding mozzarella, tomatoes and balsamic vinegar these mediterranean rice salad recipe tastes as italy.
Ingredients (for 10 servings)
500 g long grain rice
1 can corn
1 red pepper
1 green pepper
150 g cocktail tomatoes
500 g corn salad
500 g mozzarella cheese
For the dressing:
4 – 5 tbs. honey
1 tsp. mustard
juice of one lemon
1/8 liter white balsamic vinegar
1/8 liter olive oil
3 tbs. dried herbs
salt & pepper
Preparation:
Cook the long grain rice until according to package instructions. Let the rice cool down. Wash the vegetables and dice it in pieces. Put the rice with the corn, and vegetable pieces in a bowl.
For the Dressing: Squeeze the lemon. Put all ingredients for the dressing in a lockable glass and shake it for a few minutes. Marinade the rice salad with the dressing.
Add the corn salad just before serving.
Tip: the salad tastes even better if you put it in the fridge overnight.
