Easy but delicious recipe for asia glass noodle salad with prawns and vegetables.

Ingredients:

300 g mixed vegetables

250 g glass noodles

150 g shrimps (deveined, ready to eat )

150 ml Light coconut milk

3 tablespoons soy sauce

1 large onion

2 cloves of garlic

1 pkg. Asian spice mixture “Bami Goreng”

50 g cashew nuts

2 tablespoons peanut oil

salt & pepper

Preparation:

Defrost the vegetables and the shrimps. Cook the shrimps according to package instruction. Set the rice noodles aside after cooking. Mix the Asian spice mix “Bami Goreng” with 100 ml water, add the coconut milk and the soy sauce. Peel the onion and the garlic cloves and cut it in small pieces, mix it with the vegetable mix and add the cooked rice noodles. Spice it with salt and pepper. Heat peanut oil in a pan and and roast the shrimps. Put the dressing mixture in the pan an heat it for a few minutes. Put the shrimps and the heated dressing mixture to the noodles and vegetables. Leave it in the fridge for several hours.
