Fine recipe for dandelion salad with potatoes, bacon and garlic dressing. This is a typical austrian recipe made with fine local ingredients.

Ingredients (for 4 servings):

300 g fresh dandelion

250 g potatoes

16-20 slices of bacon (thinly sliced)

For the dressing:

2 garlic cloves

2 tbs honey

2 tsp mustard (medium hot)

5 tbs of apple cider vinegar

5 tbs olive oil

1/8 liter of vegetable soup

salt and pepper

Preparation:

Cook the potatoes in salted water. Peel (if you want) and half them after cooking. Wash the dandelion in cold water. Put the dandelion with the potatoes in deep plates or dishes. Garnish it with some thinly sliced bacon.

For the dressing: Peel and press the garlic cloves. Put the garlic with all the other dressing ingredients in a closeable glass. Flavor the mix with salt and pepper. Shake it for about a minute. Garnish the salad with the dressing and some pine nuts.
