Especially in summer a perfect starter or a cold and healthy snack. Light version and a bit spicy.

Ingredients (for 4 servings):

4 zucchini

1 onion

2 garlic cloves

olive oil

800 ml vegetable soup

500 g natural yoghurt

salt and pepper

1/4 tsp chili powder

some fresh herbs to garnish the soup


Peel the onion and the garlic and dice it in small pieces. Roast it in olive oil. Wash and cut the zucchini and dice it in pieces. Put the zucchini with the onions and the garlic cloves in a blender. Add yoghurt, the cold vegetable soup and blend it for a few minutes. Season it with salt and pepper and if you want some chili powder.

Ad some olive oil before you serce it and garnish it with fresh herbs.
